TWD: Fresh Mango Bread

Kelly of Baking with the Boys has chosen fresh mango bread for TWD this week. And the timing couldn't have been more perfect, as May is the season for alphonso mango from India!

I was first introduced to this extremely sweet and juicy mango when I went to India in 2005 and I was instantly hooked on it. That was the best mango I've tasted so far. Imagine my delight when I discovered that local supermarkets started to stock up on alphonso mango about two weeks ago, and since then, I've been having them almost everyday.

This is my first time using mango in baking and it certainly won't be my last! The mango bread is delicious, but I find that the ground ginger is slightly overpowering. I will reduce the amount if I were to bake it again. This is a great recipe and I really like the bread, but I only had half a slice because I really need to lose some weight. My hubby brought it to the office the next day and his colleagues like it too!

Head over to Kelly's blog if you want to give the recipe a try!

I love its chunkiness and rusticity... I chickened out and chopped my mango so small, it was barely noticable! I hate mango, but because I decided long ago, that this baking group would take me places I might not go otherwise... I still made and ate it... and loverd it.

I'm positive yours was just as great!

Is it really bread, or the name is? I thought it looks nicely cakey to me. Yum. Bear loves mango and he should like this. I'm afraid Kelly's blog isn't taking me anywhere to the recipe...Hmm...

Your bread is awesome! Must give it a try soon. Btw, I personally prefer Pakistan mango bcos of its creamy texture. Give it a try if u can find one. ;)

Pinkstripes & Engineer Baker - I hope you can get alphonso mango, it's really yummy!

Venus & Ramya Kiran - Thanks! ;-)

Isabelle - Thanks for your kind comment, as always!

Amanda - My mango bread seems to be full of mango bits because I cut them up to tiny pieces. ;-)

Allie - It's a cake to me as well... but it's called "bread". LOL!

Vibi - Glad that you still took part this week even though you dislike mango. Maybe after you try alphonso mango, you might change your mind. ;-)

Stardust - It's a "bread" that tastes like cake. LOL! Kelly has posted the recipe, go over and have a look!

Kimberly - I'm sure that I'll bake this mango bread more often too. It's yummy indeed!

Pink lady - Kelly has posted the recipe in her blog. Happy baking! :-)

Teanna - Thanks! You can read about alphonso mango from here: http://en.wikipedia.org/wiki/Alphonso_(mango)

Steph & MrsLavendula - Thanks for your compliment!

Chris - I've finished some of the TWD bakes by myself too! LOL!

Food for tots - oohh, I've not try pakistan mango before. I'll definitely keep a look out for it!

I had a Mexican mango.

As I was peeling it, I remarked to my girl "I hope this wasn't near any pigs". lolol

Yours looks great.

I've never heard of alphonso mangoes but now I'm going to be on the lookout for them because I love mangoes! Your bread looks soo delicious! I love your photos, how it focuses on one item and makes the other item a little blurry.

Your bread looks fabulous! I cut back on the ginger in mine and added cardamom, and it was a nice flavor combination.

i salute you for just having half a slice! i could probably eat the whole loaf, i love bread and this looks absolutely delicious!

Beautiful bread. I would guess the mango would determine how flavorful the loaf is. Great taste.
