Pan-fried Tofu topped with Minced Pork



Pan-fried Tofu topped with Minced Pork Recipe

Ingredients:
3 blocks of dry tofu (tau kua/ 豆干)
150g minced pork
3 dried mushrooms (soaked until soft, chopped)
2 tablespoons dried shrimps (soaked until soft, chopped)
2 tablespoons chopped spring onion

Seasoning:
1 tsp dark soy sauce
1 tsp L&P sauce
1/2 tsp sugar
Salt & pepper, to taste
A dash of Shaoxing wine


Method:
1) Heat up 2 tablespoons of oil in a wok. Pan fry the tofu until the sides are golden brown. Dish up and set aside.
2) Leave 1 tablespoon of oil in the wok, saute mushrooms and dried shrimps with sugar until fragrant. Add minced pork and saute until it's cooked.
3) Add the remaining seasoning, stir quickly until well combined.
4) Dish up and divide into three portions. Place the minced pork mixture on the tofu, sprinkle with some chopped spring onions. Serve.

I love tofu and this is a real treat. Never thought of using tau kuah for this dish. I normally use the soft tofu with the same topping. Thanks Piggy for this idea of using tau kuah! Yum Yum

L&P Sauce is Lea and Perrin's Sauce - or Worcestershire Sauce.
